Make Greek Chicken Salad at Home: Tender Chicken in a Yoghurt-Lemon Marinade with Fresh Vegetables

For fresh vegetables, spiced chicken and the tangy taste of lemon and olive oil together, Greek chicken salad can be a great choice. Inspired by Greek salad and chicken, the dish pairs tender chicken with fresh lettuce, tomato, cucumber, capsicum, olives and cheese.
The dish is light yet filling. It can easily be made at home for lunch or as a light dinner.
For the chicken marinade you will need 1 cup of yoghurt, the juice of 1 large lemon, 2 tablespoons of extra virgin olive oil, 2 tablespoons of vinegar, 3 cloves of chopped garlic, salt and black pepper to taste, 1 tablespoon of oregano, 1 teaspoon of paprika, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder and 700 grams of chicken.
For the salad you will need 225 grams of lettuce, 280 grams of cherry or grape tomatoes, 1 capsicum, 1 cucumber, 2 small onions, and olives and cheese as needed.
For the dressing you will need lemon juice, olive oil, garlic and oregano.
First mix the yoghurt, lemon juice, olive oil, vinegar, garlic, salt, black pepper, oregano, paprika, cumin and coriander powder in a bowl. Coat the chicken tenders well in the mixture, cover and keep in the fridge for 30 minutes. Then mix lemon juice, olive oil, garlic and oregano to prepare the dressing and set it aside.
Cut the lettuce, tomato, capsicum, cucumber and onion into a large bowl. Add the olives, pour in a few tablespoons of dressing and toss lightly. Sprinkle cheese as needed.
Heat 1 tablespoon of olive oil in a non-stick pan. Shake the excess marinade off the chicken and place it in the pan. Sear one side for about 5 minutes until brown, then turn it over. Cook the other side for 5 minutes as well. Take the chicken off the heat once it is cooked through.
To serve, place the prepared salad in a bowl and arrange the hot chicken on top.
